🔥 Prep

  • Measure 250 g rice flour into a mixing bowl.
  • Peel and finely chop 1 onion.
  • Grate 2 tbsp carrot (or measure pre‑grated carrot to yield 2 tbsp).
  • Rinse and finely chop 2 tbsp dill leaves.
  • Slit 2 green chillies, remove seeds if desired, and finely chop them.
  • Measure 1 tsp cumin seeds, 3 tbsp grated coconut, 1 tsp salt, and 4 tbsp oil.
  • Measure 150 ml water and keep ready.

  • 1. In a large bowl, combine the measured rice flour, chopped onion, grated carrot, chopped dill leaves, chopped green chillies, cumin seeds, grated coconut, and salt; mix well.
  • 2. Add 4 tbsp oil to the mixture and stir to coat the flour.
  • 3. Gradually pour in 150 ml warm water while stirring, mixing until a soft, non‑sticky dough forms (Mix until the dough comes together).
  • 4. Cover the dough with a damp cloth and let it rest for 5 minutes to allow the flour to hydrate.
  • 5. Divide the dough into 6 equal portions (≈40‑45 g each) and roll each portion into a smooth ball.
  • 6. Place a ball between two sheets of parchment paper or a plastic bag and press gently with a flat plate or a roti press to form a disc of about 12‑15 cm diameter and 3‑4 mm thickness.
  • 7. Heat a non‑stick tawa or skillet over medium heat until hot (a few drops of water should sizzle and evaporate).
  • 8. Place the flattened roti on the hot tawa and cook for 1‑2 minutes until the surface looks dry and small bubbles appear.
  • 9. Flip the roti and drizzle a few drops of oil around the edges; cook for another 1‑2 minutes on medium heat until brown spots develop.
  • 10. Press lightly with a spatula and cook for an additional 30 seconds on each side to ensure the roti is cooked through.
  • 11. Transfer the cooked akki roti to a plate and repeat steps 6‑10 for the remaining dough balls.

  • Serve the akki rotis warm, stacked on a plate.
  • Accompany with coconut chutney, tomato‑onion chutney, or a side of plain yogurt.
  • Pair with a spicy pickle or a simple cucumber raita for extra freshness.
